A chef in a former life, Jeff Miller now researches food and culture issues as well as traditional food production and preservation methods. Miller, coordinator of CSU’s Hospitality Management program, spent 20 years as a professional chef before becoming an award-winning instructor. He helped found the student-run Aspen Grille in the Lory Student Center on campus, and was named the 2017 CAFÉ/Sysco Corporation Educator of the Year. An American Culinary Federation certified executive chef and culinary educator, Miller has written on a range of food topics for various popular platforms, including The Conversation, where he has covered everything from the discontinuation of the once-iconic diet soda Tab to the rise of ghost kitchens during the pandemic. Miller’s most recent book, “Avocado: A Global History,” explores and decodes the complex history and cultural impacts of the wildly popular fruit. Yields: 8 to 10 Ingredients 5 peaches, pitted and cut into quarters 2 (10 count) can refrigerated biscuits 4 tbsp butter 2 tbsp lemon juice 1 cup sugar ½ cup water Directions Cut each biscuit in half and flatten to fit around peach quarters. Wrap each biscuit half around one peach quarter, making sure peach is completely covered. Place each peach section in a slightly greased baking dish. Cut butter into small pieces and sprinkle over biscuits. Pour lemon juice over top of butter. Boil sugar and water for 5 minutes. Pour over biscuits. Bake at 350 for 15 to 20 minutes or until biscuits are golden brown.

Yields 2 to 4 servings Ingredients 2 large red delicious apples, coredand finly diced 1 ½ tsp raisins 2 tsp orange juice 3 tbsp super chunk peanut better 4 large lettuce leaves 2 whole pita pockets Directions In a medium bowl combine apples, raisins, and orange juice, hold for 5 minutes. Ad peanut butter and mix well. Line each pita pocket with lettuce leaf that has been torn to fit. Divide peanut better mixture into 4 equal parts and spoon into pockets. Serve and enjoy for a healthy snack.

This video is for one of my favorite loaves of bread. 50% wheat flour, 80% hydration, made with a biga. I go briefly into time and temperature, and how it had an effect on the biga rise time. This is a no knead, folded method. A lot of things I realize seem off, like my hour actually being timed out to an 1.25 hours on my folds, and I couldn't get it to fit into the video, but all things bread related are like bbq. Use time and temp as guidelines, but use your intuition more than anything. Recipe: Biga: Flour (King Arthur Bread Flour Preferred) :250g Water: 170g Yeast: .2g or 1/16th tsp Final "Final Dough": Whole Wheat Flour: 250g Warm (100 degree) water: 230g Salt: 11g Yeast: 1.5g Banneton: 🤍 I hope you found this video helpful. This is more about me learning to edit videos, but wanted to be productive in the process. #sourdough #cookingdemo #englishmuffin #chef #athome #benedict #recipe Here's everything you'll need: 1/4 tbs (5g) salt (we used Himalayan pink salt, but any fine grained, non iodized salt will do) 1/8 cup (14 g) nonfat milk powder 1 3/4 cup (211g) all purpose flour 1/2 Tbs (6g) sugar 1/4 Tbs (2g) instant yeast. (2.7 grams if using active dry yeast for best results) 1/4 cup (57 g) active sourdough starter. (This was fed out of the refrigerator 24 hours prior to use, and then once more about 6 hours before use.) Wild Foodie forages with gourmet chef

Lynn Landes, founder of the Wild Foodies of Philadelphia joins with Chef Jeff Miller of the eponymous catering company to forage for wild plants in the fields of the Weavers Way Coop farm at Awbury Arboretum. The plants, which Lynn doesn't like to call weeds although they are generally considered so, were to appear in the salad of a dinner that very evening to benefit the arboretum. Miller sampled some succulent-like purslane which he describes being crunchy and also some carpet weed which your correspond concurs has a strong, mushroomy flavor. These, wood sorrel other "weeds" were all competing for purchase in the fertile soil where the farmers had planted onions for harvest months later. Landes takes the zealot's stance that only wild plants and animals, free for the taking are a sustainable source of food because agriculture of any kind requires ongoing maintenance.
