Lamb Vindaloo Recipe: Mutton/ Lamb - 1 kg Onion (chopped) - 1 cup Hot Water - 1 Cup Salt - 2 tsp Sugar - 1 tsp Oil - 4 tbsp For the paste: Kashmiri Dried Red Chilli - 10 nos Dried Red Chilli - 8 nos Onion (roughly cut) - 1 Cup Peppercorn - 1 tbsp Coriander Seeds - 1 tbsp Cloves - 10 nos Cinnamon - 2-inch Piece Cumin Seeds - 2 tsp Garlic - 15 cloves Ginger (roughly cut) - 1-inch piece Vinegar - 3 tbsp Cooking Instructions: 1. Heat 2 tbsp of oil in a pan. Add all the ingredients needed for the paste, except the vinegar. Cook until it is fragrant. 2. Once they cooled down a little, add them to a mixer jar. Add vinegar and grind to a paste. 3. Marinate the mutton with the paste for at least 2 hours. It tastes best when marinated overnight. 4. In a pan, heat 4 tbsp oil and add the chopped onions and saute until it starts to brown. 5. Add the marinated mutton. Cook for 5 minutes, stirring occasionally. Add 2 tsp of salt and sugar. 6. Add water and bring it to a boil. Cover and simmer on medium-low heat for 45 minutes, or until the mutton is well cooked and tender. The basic staples remain the native corn, beans and chili peppers but the Europeans introduced a large number of other foods, the most important of which were meat from domesticated animals (beef, pork, chicken, goat and sheep), dairy products (especially cheese) and various herbs and spices. Over the centuries, this resulted in various regional cuisines, based on local conditions such as those in the north, Oaxaca, Veracruz and the Yucatan Peninsula. Mexican cuisine is highly tied to the culture, social structure and its popular traditions, the most important example of which is the use of mole for special occasions and holidays, particularly in the South region of the country. For this reason and others, Mexican cuisine was added by UNESCO to its list of the world's "intangible cultural heritage". Mexican cuisine is complex, as complex as any of the great cuisines in the world such as those of China, France and Turkey. It is created mostly with ingredients native to Mexico as well as those brought over by the Spanish conquistadors, with some new influences since then. Native ingredients include tomatoes, squashes, avocados, cocoa and vanilla, as well as ingredients not generally used in other cuisines such as various edible flowers, vegetables such as huauzontle and papaloquelite or small criollo avocados, whose skin is edible. European contributions include pork, chicken, beef, cheese, various herbs and spices and some fruits. Tropical fruits such as guava, prickly pear, sapote, mangoes, bananas, pineapple and cherimoya (custard apple) are popular, especially in the center and south of the country.It has been debated how much Mexican food is still indigenous and how much is European. However, the basis of the diet is still corn and beans with chili pepper as a seasoning as they are complimentary foods. Despite the introduction of wheat and rice to Mexico, the basic starch remains corn in almost all areas of the country. While it is eaten fresh, most corn is dried, treated with lime and ground into a dough. This dough is used fresh and fermented to make a wide variety of dishes from drinks (atole, pozol, etc.) to tamales, to sopes and much more. However, the most common way to eat corn in Mexico is in the form of a tortilla, which accompanies almost every dish in Mexico. Tortillas are made of corn in most of the country but other versions exist such as wheat in the north or plantain, yuca and wild greens in Oaxaca. The other basic ingredient in all parts of Mexico is the chili pepper. Mexican food has a reputation for being spicy, but its seasoning can be better described as strong. Many dishes also have subtle flavors as well. In Mexico, the various chili peppers are used for their flavors and not just their heat, with Mexico using the widest variety of chili peppers. If a savory dish or snack does not contain chili pepper, hot sauce is usually added and chili pepper is often added to fresh fruit and sweets. The importance of the chili pepper goes back to the Mesoamerican period, which it was considered to be as much of a staple as corn and beans. In the 16th century, Bartolomé de las Casas wrote that without chili peppers the indigenous did not think they were eating. Even today, most Mexicans believe that their national identity would be at a loss without it. Many dishes in Mexico are defined by their sauces and the chili peppers those sauces contain, rather than the meat or vegetable that the sauce covers. These dishes include entomatada (in tomato sauce), adobo or adobados, pipians and moles. A hominy soup called pozole is defined as white, green or red depending on the chili pepper sauce used or omitted. Tamales are differentiated by the filling which is defined by the sauce (red, green, chili pepper strips or mole). Dishes without a sauce are nearly inconceivable to eat without a salsa or with fresh or pickled chili peppers. This includes street foods such as tacos, soups, sopes, tlacoyos, gorditas and sincronizadas.For most dishes, it is the variety of chili used that gives it its main flavor.

This lamb curry is melt-in-your-mouth tender and features the flavours of aromatic fennel and fiery chili. The best part is that it only takes 45 minutes, and it's a curry you don't have to babysit on the stove. Which means, more time to do other things :D Perfect paired with hot basmati rice, or naan/rotis. INGREDIENTS 2 lbs boneless lamb shoulder, cubed ¼ cup plain yogurt 4 tsp ground fennel 4 tsp kashmiri chili powder 1 tsp turmeric 1 medium onion, chopped 4 cloves garlic 2 inches ginger, sliced 4 tbsp canola oil 1 bay leaf 1 small piece cinnamon 4 green cardamom 3 cloves ½ cup strained tomato sauce (passata) 2 tsp ground coriander 2 tsp ground cumin Salt to taste ½ cup water Fresh chopped coriander to garnish METHOD In a large bowl marinate lamb in yogurt, 2 tsp ground fennel, 2 tsp chili powder, turmeric, and salt to taste. Mix to combine, and allow to marinate for as long as it takes to prep the other ingredients. To a food processor/blender add onions, garlic and ginger, and blend until smooth. Set Instant Pot to saute mode, and add oil. Once hot, add bay leaf, cinnamon, cardamom, and cloves and saute for 10-15 seconds or until fragrant. Add onion mixture and cook for 5-6 minutes stirring often until slightly golden. Pour in strained tomato sauce and seasoning with remaining fennel, chili powder, ground coriander, ground cumin and salt to taste. Cook tomato mixture down until the oil begins to separate along the edges, and the tomatoes become jammy in texture. Add marinated lamb, and mix to coat in cooked down tomatoes. Cook for 5-6 minutes to seal all sides of the lamb. Add water, and set Instant Pot to the pressure cook setting on high. Set the timer to 25 minutes. Once ready, allow pressure to naturally release. Reduce curry on saute mode to desired consistency. Garnish with fresh coriander and serve with hot basmati rice, naan, or rotis. Enjoy!

This dish is best to be made with lamb leg and I found that Trader Joe's has these amazing lamb leg. Of course if you have other butchers for good lamb, go for it! Cumin Lamb is a traditional Sichuan dish and can be commonly found in halal restaurants in Chengdu! Ingredients;;; Lamb leg : 1 & half kg Coriander seeds: 1 & half tbsp (roasted & crushed) Cumin seeds: 1 & half tbsp (roasted & crushed) Turmeric powder: 1 tsp Cinnamon powder: 1 tsp Smoked paprika: 1tbsp Garlic: 7/8 cloves Saffron: pinch Chilli flakes: 1 tbsp Black pepper: 1 tbsp Salt: 1 & half tsp Olive oil: 1/3 cup Lemon juice: 30 ml (2 tbsp) Butter: 50g Mint & coriander: 1/4 cup chopped . . . Ingredients - Wide wheat noodles - 2 tbsp cumin seeds - 1 tbsp Sichuan peppercorns - 1/2 tsp pink peppercorns - 1 brown onion, sliced - 1 knob ginger, grated - 5 cloves garlic, finely diced - 1 bunch coriander, finely sliced (roots and leaves separate) - 2 tbsp shaoxing cooking wine - 2 tbsp light soy sauce - 2 tbsp dark soy sauce - 1 tbsp rice vinegar - 2 tbsp chilli oil - 400g lamb leg or shoulder, sliced thin (if there are lots of heavy white fat dice this small) - 2 tbsp cornflour - 1 tbsp salt - 3 tbsp grapeseed oil Method 1. In a frypan, toast the cumin and Sichuan peppercorns, once fragrant grind to a fine powder. 2. In a small bowl, mix both the soy sauces, vinegar, chilli oil and wine. 3. Heat the oil in a large wok or frypan over medium-high heat. 4. Season your sliced lamb with salt and dust with the cornflower 5. Next, add the diced lamb fat. You will need to render first (this stuff is delicious so it's worth doing) and cook until it's golden brown. 6. Now, add the sliced lamb and onions, and sauté for 3-4 minutes. 7. Now, add garlic, ginger and coriander roots followed by the ground spices, mix well and cook for 3-4 minutes. 8. Once the onions start to soften, add the noodles followed by the sauces. 9. Cook for 3-4 minutes or until the sauce is evenly mixed through the noodles. 10. Enjoy!
