De BRIG E10 is geen gewone RIB, dit is een mega-RIB. Het is het topmodel van de BRIG werf, waar ze wat ze zelf noemen Rigid Intelligent Boats bouwen. Het zijn Europese RIB's met alles wat je van dit boottype mag verwachten. Motorisering is mogelijk met een of twee motoren tot maximaal 700 pk. Onze testboot heeft twee Mercury's Verando's van 400 pk aan de spiegel. Met de BRIG E10 kun je letterlijk een tijdje op pad, want de RIB is uitgerust met een overnachtingsmogelijkheid in de kajuit. Onder de stuurbank achter heb je een complete wetbar met gascomfort, spoelbak en koelkast. Here is the way I like to satisfy my craving for tender, juicy and smokey BBQ ribs, when I don't feel like smoking ribs on a pit. I slow cook them in the oven and sauce them with easy homemade barbecue sauce. Holiday Prime Rib (Thicc crust) Prime rib can go two ways. The first is a pale, overcooked and bland slice of roast beef. The second is a rosy pink and juicy slice of perfection. Our goal is the latter and here are a few points to keep in mind: Choose the right roast: good marbling with a large cap muscle The crust: prime rib has extremely low surface area to volume, so focus on a thick & flavorful crust Dry brine: due to that low surface area, the inside can be bland/unseasoned. Heath has won the Rib Team of the year in the Memphis BBQ Network for the past 4 years; (He’s well on his way to locking up a fifth title) so he knows a little something about cooking ribs. I’m thankful he’s willing to share his technique with us. Heath cooks Heritage Farms Cheshire Pork in bbq competitions. This meat is known for its’ superior marbling and flavor. The ribs are given a quick trim to remove and excess fat or sinew and he pulls the membrane off the back. For KCBS contest Heath cooks 4-6 slabs of St. Louis cut ribs and for MBN contests he cooks 12 slabs of the loin back ribs which are a Memphis staple. The ribs get a light coat of yellow mustard; then a generous layer of his Jalapeño Garlic seasoning; followed by medium layers of his signature Pecan and Honey Rubs. The same process is repeated on both sides, and he seasons the ribs about 20 minutes prior to going on the pit. For this cook Heath used my Trager grill running at 275⁰ with a mixture of Hickory and Cherry pellets for smoke flavor. The ribs go on the grill for about 2- 2 ½ hours or until the rub adheres to the meat and then they’re wrapped. In the wrap apply a light layer of Honey rub and lay the slab meat side down. Add a touch more Honey rub to the back side and ¾ cup of Heath’s Butter Bath mixture (it’s a powdered form of Brown Sugar, Butter, Honey, and other spices mixed with apple juice). Be sure to double wrap the ribs so the bones don’t poke through the foil. The ribs go back on the pit for an hour to tenderize and Heath pulls them off the pit when the internal temperature reaches 204 - 208⁰. He carefully takes the each slab out of the foil wrap and dust the back side with his Sweet Rub and light glaze (1 cup Sweet BBQ Sauce & ½ cup Tangy Vinegar). Then repeats the same process on the meat side. The ribs go back on the pit for 15-20 minutes to set the glaze and then it’s time to serve them to the judges. These ribs had a beautiful appearance and perfect texture, but the best part was the flavor. The rub combination and tangy sweet glaze brought out the richness in the Cheshire Pork. Charred and rendered beef fat is the best bite of a steak. Smokey and packed with flavor, it melts in your mouth. This is very different from the thick layer of fat separating the eye and the cap of a rib roast. While edible, it’s trapped inside the roast during the cooking process and therefore never exposed to high or direct heat. Beef fat only starts to break down around 130F, so at medium rare, this knob of fat can’t sufficiently render. Prime rib should already have great marbling, and I find that this non rendered blubber is unnecessary. To maintain it’s original shape/appearance, I re-added blue cheese and beef bacon. If you don’t like blue cheese, feta or goat would be great alternatives. I smoked this prime rib at 250F for about 3.5 hours and pulled at 120F internal. You should expect ~13 degrees F of carryover when cooked at this temp. This is Jay’s winning rib technique and what made him the defending Rib Champion going into the 2021 MIM event. I turned the pit over to Jay in this video as he walks us through the whole rib process. Jay starts with fresh baby back ribs trimmed of any excess fat and chine bones removed. This process can be a little tricky, so I usually leave the saw work up to a butcher. Most butchers will gladly trim those for you just ask them to square the rack up and knock the chine bone off with a saw. We do this in contest because it shortens the length of the rib making it easier to get them into the blind box. It also cleans up the ends of the bones, so the judges don’t get bits of cartilage or bone fragment when they take a bite. The ribs are then seasoned with generous layers of Jay’s Tennessee Mojo Rub and my Killer Hogs Hot Rub and smoked with Hickory wood for a couple hours. When the color is just right, Jay wraps the ribs to get them tender. He loads that wrap up with all sorts of delicious ingredients including heaping spoons of Country Crock (Jay says if its good on crackers then it’s good on Ribs!). The ribs are placed back on the pit and cooked for another 1 1/2 hours. At this point they should be perfectly tender. Each rib is placed in a cheap cooler to hold for at least an hour before the glazing process. Just before rib judging each rack is taken out of the foil and brushed with bbq sauce. Jay’s mixture is 50/50 blend of Killer Hogs The BBQ Sauce and Killer Hogs Vinegar Sauce. He brushes a thin coat of warm sauce on both sides, places the ribs back on the pit for 10-15 minutes, and finally uses a little more rub ran through a thumb grinder to give them a pop of flavor. Each rack is sliced into 2 bone sections for the blind box and the remainder are served whole for the judges to pull apart by hand. The texture is what sold me on Jay’s ribs. The meat was perfectly cooked. Each bite was packed with moisture and the outer bark layer was delicious. You could taste the hickory smoke but it wasn’t overpowering at all. I can see why Jay has been so successful at the World Championship. His rib technique is Killer!!! Give it a try if you want to experience a World Class rib recipe - Mojo Style! According to the official wave buoy, waves up to almost 4 meters high rolled into the IJmuiden harbor from the North Sea. A deep brown crust crackling with salt and fat, sliced open to reveal a juicy pink center that extends from edge to edge. When you see such a roast in front of you, everything else—the argument you had with your sister over mashed potatoes, the red wine stain on the carpet, the enticingly crisp bowl of roast potatoes, even the plaintive look of the dog staring up with a please sir, can I have a bone? face—disappears as you become lost in a mental vortex of juicy meat, crisp fat, and drippings. The reverse-sear is the best way to get there. NOTES: This recipe works for prime rib roasts of any size from two ribs to six ribs. Plan on one pound of bone-in roast per guest. (Each rib adds one and a half to two pounds to the roast.) For best results, use a dry-aged prime-grade or grass-fed roast. To improve the crust, allow the roast to air-dry, uncovered, on a rack in the refrigerator overnight before roasting. Seasoning with salt up to a day in advance will help the seasoning penetrate the meat more deeply. If, after step 1, your timing is off, and your roast is ready long before your guests are, reheat the roast by placing it in a 200°F (93°C) oven for 45 minutes before you continue with step 2. INGREDIENTS: 1 standing rib roast (prime rib), 3 to 12 pounds (1.3 to 5.4kg; see note above) Kosher salt and freshly ground black pepper DIRECTIONS: 1. Preheat oven to lowest possible temperature setting, 150°F (66°C) or higher if necessary. (Some ovens cannot hold a temperature below 250°F/121°C.) Season roast generously with salt and pepper. Place roast, with fat cap up, on a V-rack set in a large roasting pan. Place in oven and cook until center of roast registers 120-125°F (49-52°C) on an instant-read thermometer for rare, 130°F (54°C) for medium-rare, or 135°F (57°C) for medium to medium-well. In a 150°F oven, this will take around 5 1/2 to 6 1/2 hours; in a 250°F oven, this will take 3 1/2 to 4 hours. 2. Remove roast from oven and tent loosely with aluminum foil. Place in a warm spot in the kitchen and allow to rest for at least 30 minutes and up to 1 1/2 hours. Meanwhile, preheat oven to highest possible temperature setting, 500 to 550°F (260 to 288°C). 3. Ten minutes before guests are ready to be served, remove foil, place roast back in hot oven, and cook until well browned and crisp on the exterior, 6 to 10 minutes. Remove from oven, carve, and serve immediately.

A prime rib can be an intimidating recipe- but we've got a fool-proof method and easy recipe for a killer prime rib or standing rib roast that is perfect for the holidays, special occasions or just to enjoy some good beef! Prime Rib 5 - 6 lb Standing Rib Roast / Prime Rib 1 stick butter, softened 2 tbsp Coarse Ground Pepper 2 tbsp Coarse sea salt 1 tbsp Smoked Paprika 2 tsp Red River Ranch Mesquite (optional) available here: 🤍 1 tsp fresh thyme, minced 1 tsp fresh rosemary, minced 4 cloves. garlic, minced tbsp olive oil 1. Let the roast set on the counter for 3 - 4 hours or until room temperature to ensure an even cook. 2. Pre heat the oven to 500 degrees F. 3. In a mixing bowl, whisk together the butter and remaining ingredients until smooth. 4. Rub the roast with the mixture so it is evenly coated on all sides. Place the roast, rib side down, in a dish or roasting pan. Generously sprinkle the top with additional sea salt. 5. Roast for 30 minutes (5 minutes per pound). Then turn off the oven. Let the roast set in the oven for 2 hours - DO NOT open the oven door during this time. 6. Remove the roast from the oven and check the temperature - it should be in the 120 - 125 degree range. Lightly cover with tinfoil and let for 5 - 10 minutes. During this time the internal temperature will rise slightly to bring it to the medium-rare range, roughly 130 degrees F. 7.
