Ingredients: 1 1/2 c water 4 1/4 flour 3 tbsp sugar 2 tbsp dry milk 1 1/2 tsp salt 2 tbsp butter 2 tsp active dry yeast 1 lb ground pork 2 tsp salt 1 tsp grated ginger 1 tsp white pepper 2 tsp soy sauce 2 tsp sugar 2 tsp oyster sauce ½ c chicken broth 1 tbsp sesame oil 3 green onions 1 tbsp cornstarch 2 c water Instructions: 1. Follow the bread machine maker instructions to make the dough. 2. Add all seasonings and stir well with ground pork. Slowly add ½ cup of chicken broth to the meat a third at a time, and add sesame oil stir in a circular motion. Refrigerate for half an hour 3. Knead the dough. Push the air out, about five min. 4. Divided the dough into 20 balls. 5. To make the buns, follow the video direction. 6. Heat 3 tbsp oil in the pan. 7. Medium heat. Add the buns into the pan. 8. When the bottom turns brown, add cornstarch water. 9. Cover and cook for 10 min, 10. Turn off the stove. Do not remove lid. Let sit in pan for 3 min(keeps buns from shrinking). #生煎包 #水煎包 #肉包 ingredients食材 Dough 皮子:(約可以做18~20個) • All purpose flour中筋麵粉 500g (也可以用高筋麵粉,麵團吸水度會有影響,可以適當增加少許冷水用量) • Salt 鹽 2 tsp • Caster sugar 白糖 2TBSP • Baking powder 泡打粉 1tsp • Hot water 熱水 150g • Water 冷水 160~175g(麵粉不同吸水度不同,可以適量的調整水量) • Instant yeast 即溶酵母粉 2 tsp • Oil or lard 油或豬油 2 TBSP Filling 馅料: • Pork 猪肉末 300g (選擇帶肥肉35~40%或是五花肉的部位做出來會比較多汁) • Chinese celery 芹菜 150g(選擇性添加) • Ginger 姜 15g • Sesame oil芝麻油 2TBSP • Soy sauce 醬油或生抽 3~4TBSP • Caster sugar 糖2TBSP • Rice vinegar 米醋 2TBSP • Lard 猪油 2TBSP (如果有使用肥肉多的比例就可以不加) Optional 煎包子貼用: • Sesame 白芝麻 • Scallion 葱花
